Ingredients
8 servings
½ cupscreme fraiche
½ cupsmayonnaise
¼ cupsfresh basil
packed
¼ cupsfresh chives
chopped
2 tablespoonsfresh parsley
chopped
2anchovy fillets
1 teaspoonlemon zest
1 Tbsplemon juice
1 Tbspchampagne vinegar
1 ½ teaspoonsfresh tarragon
½ tspkosher salt
½ tspground pepper
⅓ cupwhole wheat bread
cubed
2 teaspoonsunsalted butter
8eggs

radishes
thinly sliced for garnish
Instructions
Step 1
Put a large pot of water on to boil
Step 2
Combine the creme fraiche, mayonnaise, basil, chives, parsley, anchovies, lemon zest and juice, vinegar, tarragon, salt and pepper in a blender and puree until smooth
Step 3
Pulse bread in a mini food processor until finally ground
Step 4
Melt butter in a small skillet over medium heat until being to brown, 1 to 2 minutes
Step 5
Add the bread crumbs, cook until the butter is absorbed and the bread comes are light brown, 1 to 2 minutes. Transfer to a small bowl and let cool
Step 6
Set a bowl of ice water near the stove. Using a spoon, gently lower eggs into the boiling water. Reduce heat to maintain a rapid simmer. Cook for 7 minutes. Transfer the eggs to the ice bath and let cool for 5 minutes. Peel and slice in half
Step 7
Arrange the eggs, cut side up on a platter. Spoon 1/3 cup dressing over them and sprinkle with bread crumbs
Step 8
Garnish with radishes of desired
