Ingredients

2 Tbscanola oil

0.5 lbhot Italian turkey sausage

1red bell pepper
chopped

6scallions
sliced

1 tspchili powder

½ tspcumin

1 cupcanned stewed tomatoes

¾ cupblack beans
rinsed and drained

¾ cupchickpeas
rinsed and drained

⅛ tspground pepper

4six-inch flour tortillas
sub GF if desired

½ cupMonterey Jack Cheese
shredded, sub vegan cheese if desired

Instructions
Step 1
Heat oven to 350. Spray a 4-quart casserole dish with nonstick cooking spray.
Step 2
Heat the oil in a sauté pan. Cook the sausage, red pepper, and scallions, stirring frequently to break up the sausage, until browned, 6-8 minutes.
Step 3
Add the chili powder and cumin, cook while stirring, 1 minute.
Step 4
Stir in tomatoes, black beans, chickpeas, and black pepper. Reduce heat and simmer for 5 minutes.
Step 5
Place tortillas on a work surface. Spoon the turkey mixture down the center of the tortillas, then roll them into cylinders. Place seam-side down in baking dish, sprinkle with cheese.
Step 6
Bake until heated through and the cheese is melted, 30-35 mins. Let stand 10 mins before serving.
