Ejjeh (pronounced eh-Jeh) are a Lebanese small sized omelettes / egg pancakes filled with herbs & veggies. and this one is Kousa or Zucchini, an easy, delicious and healthy recipe. It can be served as a mezze, an appetiser, a side dish, or even a main course.

Instructions

Step 1
In a deep dish, place eggs, milk, flour, baking powder, salt, pepper, crushed garlic and chili. Stir with a hand-held hook beater to get a smooth, medium-density mixture, such as qatayef or pancake batter.
Step 2
Using a vegetable grater, spread the zucchini on the large holes. Place a colander and press it with your fingertips to remove the zucchini from the liquids in it.
Step 3
Add the zucchini pulp to the mixture of milk and flour in the plate and stir with a wide spoon, so that the zucchini mixes with the mixture and is completely covered.
Step 4
For frying: In a deep frying pan, put an amount of oil, about 1 inch high deep, then place the pan over medium heat.
Step 5
Using a tablespoon, drop the omelette mixture in the oil in the form of burger patty or medium-sized balls. Wait a while about 2 minutes for the omelette to get golden brown color from bottom, flip it and get it golden color on both sides.
Step 6
Transfer the zucchini omelette onto a piece of kitchen towel to get rid of the excess oil, then serve immediately
