This is an easy lazy-day delicious meal. It’s a breakfast, it’s a lunch, and it is perfect for brunch. It’s really just the most versatile vegetarian recipe ever. You can mix it with various vegetables; add your spices and eggs. Let it cook in the oven or cover with a lid on the stove. Once those flavors are combined, top with the cheese and jalapenos slides to make really creamy and spicy. This meatless recipe is so filling and enjoyable.

Step 1
Start with setting your cast iron over medium high heat with olive oil.
Step 2
Cut all the vegetable into small pieces: onion, peppers, celery, tomato, and garlic. Add them to the cast iron pan. Season the veggies with a pinch of salt.
Step 3
Mix harissa and tomato paste with ½ cup of water. Add mix to the pan. Let the vegetable cook with the sauce for 3 minutes.
Step 4
Add the spices: paprika, cumin.
Step 5
On the cast iron make space to add the eggs. Cover with lid and let it cooked over medium heat for 5 minutes.
Step 6
Take the pan out of the heat.
Step 7
Top with chop rosemary and grated mozzarella cheese.
