This is an easy lazy-day delicious meal. It’s a breakfast, it’s a lunch, and it is perfect for brunch. It’s really just the most versatile vegetarian recipe ever. Instructions

Step 1
Start with setting your cast iron over medium high heat with olive oil.
Step 2
Cut all the vegetable into small pieces: onion, peppers, celery, tomato, and garlic. Add them to the cast iron pan. Season the veggies with a pinch of salt.
Step 3
Mix harissa and tomato paste with ½ cup of water. Add mix to the pan. Let the vegetable cook with the sauce for 3 minutes.
Step 4
Add the spices: paprika, cumin.
Step 5
On the cast iron make space to add the eggs. Cover with lid and let it cooked over medium heat for 5 minutes.
Step 6
Take the pan out of the heat.
Step 7
Top with chop rosemary and grated mozzarella cheese.
Step 8
