Step 1
1. Cut yellow onion into thin slices and chop green onion.
2. Over medium-high heat, add the dashi stock, mirin, soy sauce, and sugar to the pan. Cover the pan and bring the sauce to a boil.
3. Once boiling, add the onions to the sauce in a single layer. Cover the pan again so the sauce does not evaporate. Cook the onions until they are tender.
4. When the onions are tender, add the beef and cook the beef until no longer tender (just a little bit until not pink anymore).
5. Serve over rice. Optional:
-bok choy
-fried egg
-red pickled ginger
