Ingredients
6 servings
1 x 12 ozandouille sausage

1 cupchopped onion
1 cupbell pepper
diced
2 x 32 ozchicken broth
container
1 x 15 ozfrozen black eyed peas
1 x 14.5 ozcan rosemary and oregano diced tomatoes
8 ozcollard greens
2 cupsrice
cooked
Instructions
Step 1
1. Cook sausage, onions and bell peppers in a large dutch oven over medium high heat for 3 to 4 minutes or until sausage is brown and veggies are tender.
Step 2
2. Stir in broth, peas and tomatoes; bring to a simmer. Stir in collard greens, and cook for 10 to 15 min or until collards are tender.
Step 3
Serve with cornbread.
