Instructions
Step 1
Cook hamburger over medium heat, adding salt and pepper to taste. You can cook in a soup pot for a one-pot meal. Drain grease.

With hamburger in the pot, add diced/chopped onion and cook for 3-5 minutes, until onions are translucent.
Step 3
Add pinto beans, veg-all, rotel, and potatoes. You can add carrots, if desired. Use the pinto bean can to add water, one can is usually enough. You want it to just cover ingredients.
Step 4
Salt and pepper generously. Bring to a boil. Lower burner to medium-low, cover and simmer about 30 minutes. Stir occasionally. If water gets low during simmer, add water again to cover.
Step 5
Soup is done when potatoes are cooked through. Serve with cornbread and cheddar cheese on the side.
