Instructions
Preheat oven to 350°F
Step 1
Line baking tray with parchment paper.
Step 2
Using mixer with paddle attached, beat butter, brown sugar, & sugar together on med. (2 min.) It will be light in color & fluffy.
Step 3
Add peanut butter & vanilla; continue mixing on med.
Step 4
Add egg; turn the mixer on high & beat (2 min.)
Step 5
Fold in flour & baking soda until just combined. (Make sure not to overmix!)
Step 6
Fold in mini chocolate chips.
Step 7
Using lg. cookie scoop, scoop 3-4 Tbsp per cookie. Roll each into a ball; place onto parchment paper.
Step 8
Bake six cookies at a time (10-13 min.) unti cookies are slightly golden on edges. Top with extra mini chocolate chips while still hot.
Step 9
Allow to cool on baking tray (5 min.) before transferring to a cooling rack. Enjoy!
