Instructions
Step 1
lightly salt and pepper each side of chicken and set aside
Step 2
Mix Mayo (lite is fine) with lime zest
Step 3
Save rest of lime for wedges to serve with chicken
Step 4
Finely grate the fresh ginger (jar of ginger is ok) Mix with mayo and lime zest
Step 5
Add salt and pepper to taste
Step 6
Add chicken to bowl and coat the chicken with the marinade.
Cover and marinate up to 8 hours
Step 7
Grilling this chicken is preferable but can also be done in a skillet on the stove. Grill or pan saute thighs for 5 minutes on each side or until juice of chicken grill. If using chicken breast, cook for 4 minutes each side.
Step 8
Possible to decrease the mayo to 1/4 cup if desired. Serve with lime wedges.
