Instructions
Step 1
Put dried fruit, butter, brown sugar and tin of crushed pineapple (OR water OR orange juice) into a saucepan and bring slowly to a boil, then simmer for 1-2 minutes. Allow to cool for one hour.
Step 2
Then add: sifted self-raising flour, plain flour, bicarbonate of soda and mixed spice.
Step 3
Stir in beaten eggs.
Step 4
Mix well, then tip into a prepared 8" round spring form tin.
Step 5
Bake for 1 1/2 hours. Fan oven 140°.
Step 6
**Note : you can use 8 oz fresh orange juice or 8 oz water.
Step 7
OR you can use one whole tin of crushed pineapple, including the juice.
