Bell pepper nachos

A lower carb healthier version of loaded nachos. All your favorite nacho flavors stuffed into bell pepper slices. So filling you could have this for dinner!

Instructions

Step 1
Preheat oven to 375°
Step 2
Cut the peppers into 4-5 slices, you want them wide so the filling doesn’t fall out
Step 3
Cook the beef and add the taco seasoning and cook according to directions

When the beef is done add the corn and beans and mix in
Step 5
Add the pepper slices to a sheetpan. Add 2 tablespoons of the ground beef filling to each pepper. Sprinkle cheese on top. Bake for 15 minutes. Top with your favorite topping such as salsa, avocado, shredded lettuce, jalapeños, sour cream and enjoy!
