Ingredients

2boneless skinless chicken breasts

1 poundbaby yellow potatoes

2 cupscarrots

2 cupscelery

1yellow onion
medium

1 packageportobello mushrooms

4 cupslow sodium chicken broth

Chicken bullion

2 Tbspitalian seasoning

3bay leaves
large

1 Tbsponion powder

1 Tbspgarlic powder

salt
to taste

pepper
to taste

3 Tbspunsalted butter

2 Tbspcorn starch

Instructions
Step 1
In an 8 quart crock pot, place raw boneless skinless chicken breast in the bottom
Step 2
Chop the onion, mushrooms, carrots, and celery. We like our onion diced, mushrooms sliced thin, carrots julienned, and celery roughly chopped. Place in top of chicken.
Step 3
Wash baby potatoes and put in the crockpot whole.
Step 4
Add seasonings and chicken broth.
Step 5
Microwave about 1/2 cup of water for 30 seconds. Mix in corn starch and stir til smooth. Pour into crockpot.
Step 6
Top the ingredients with water, but do not fully submerge. Just enough to top it off.
Step 7
Cook on low for 8 hours, or until chicken and potatoes are fully cooked.
Step 8
Shred or chop chicken, add back to crock pot and serve.
