Ingredients
4 servings
1seedless watermelon
cut into 1/2-1 inch cubes
1cucumber
large, diced
1jalapeño
diced, remove seeds and white membrane prior to dicing for a mild heat
1lime
Juice of
½ cuppumpkin seeds
1 bunchmint
large, thinly sliced, AKA chiffonade
1 bunchcilantro
chopped to your texture preference
1shallot
large, thinly sliced into rings
Chili Lime seasoning
to taste
6 ozfeta
Kosher salt
if needed for seasoning
Instructions
Step 1
Combine all ingredients in a bowl. Season with salt and chili lime seasoning to taste. Don’t add the salt until after you add the feta! Feta is already salty as it is.
