Pumpkin Spice Cupcakes
A spiced pumpkin cake with a neufchâtel cheese filling and frosting.

Ingredients

1.75 CWhite Sugar

¼ cbrown sugar

1 cbutter

4eggs
1.5 TbspVanila Paste

3 cflour

3 ½ tspBaking Powder

7.5 ozPumpkin Puree

cinnamon

nutmeg

clove

ginger

1 cmilk
For Filling
For Frosting
Instructions
Step 1
Cream together Butter and Sugars, add Eggs one at a time beating well after each addition. Cream in the Oil, then mix in the Vanilla Paste. Add Pumpkin Puree and mix well to incorporate.
Step 2
In a bowl separate from the wet mixture, mix together the Flour, Salt, Baking Powder, Cinnamon, Nutmeg, Ginger and cloves. Add the wet mixture and fold until completely combined. (If batter is too thick, add milk in small quantities until thin enough.
Step 3
Add to lined cupcake tins, and bake at 350 Degrees Farenheit for approximately 15-25 minutes.
For Filling
Step 4
Cream together the Cheese, Butter, Vanilla and Salt. Once smooth, blend in pumpkin puree.
Step 5
Blend in powderded sugar in quarters until smooth, creamy and slightly thin.
For Frosting
Step 6
Beat together Butter and Neufchatel until smooth and lump free, then add the Vanilla Paste and Salt and combine well.
Step 7
Slowly beat in the Powdered Sugar on low speed until fully incorporated.
