Charlotte's Polish Sausage & Sauerkraut

Instructions

Step 1
Place the sausage in a large pot so that it is covered by at least three inches of water and bring to a boil
Step 2
Let sausage cook in the boiling water for 50 minutes if sausage was uncooked; if cooked, remove from the water and proceed
Step 3
In a separate large pot, combine undrained sauerkraut, brown sugar, pepper, caraway seed, barley, and yellow onion
Step 4
Cover the sauerkraut pot and bring to a boil over medium-high heat
Step 5
After the sauerkraut mixture comes to a boil, remove the cover and reduce heat to medium-low and cook for an additional 30 minutes, stirring occasionally
Step 6
When the sausage is finished cooking, drain and allow to cool
Step 7
Remove casing off of the sausage (if desired)
Step 8
Cut the sausage into 1/4" thick medallions
Step 9
Combine the sauerkraut mixture with the sausage medallions and serve
