Peanut Sauce Soba with Chicken

Instructions
Step 1
Preheat oven to 450F.
Step 2
Season chicken with salt, pepper, paprika on both sides. Cook chicken in the oven for about 20 minutes.
Step 3
Let chicken cool, and shred the chicken. Set aside.
Step 4
Follow the soba noodle package instruction, and cook soba noodles. Save 1/4 cup cooking liquid for the sauce.
Step 5
Combine sauce ingredients in a small bowl mix well.
Step 6
Put soba, chicken, pour sauce, edamame beans, and cilantro in the noodle bowl.
