Instructions
Step 1
Cut the fat off the chicken thighs. Chop chicken into bite size pieces.
Step 2
Boil the chicken in the 2 cups of water for about 5 minutes, then drain the chicken. Reserve used water to use as chicken stock.
Step 3
To make the sauce, combine the chicken stock, soy sauce, and sugar in a saucepan over medium heat. Make a slurry by separately mixing together the potato starch and 1 tbsp water, then slowly mix the slurry into the rest of the sauce to thicken it.
Step 4
Over high heat, put a bit of oil in a frying pan, followed by the garlic. Add semi-cooked chicken to pan, followed by onions, peppers, and finally the teriyaki sauce. Let cook just long enough for the flavors to combine nicely. Enjoy!
