Ingredients
6 servings
6Golden potatoes
peeled and cubed
5eggs
boiled, peeled and diced
1 ½ cupsmayonnaise
4 Tbspsweet salad cubes
or sweet relish
3 Tbspyellow mustard
1 tspsalt
1 tspblack pepper
1 tspgarlic powder
1 tspgranulated sugar
1 tsponion powder
For boiling the potatoes
Instructions
Step 1
Add 3 inch potato cubes into a strainer and rinse thoroughly. Transfer potatoes into a large pot. Cover with water.
Step 2
Add chicken bouillon. Boil over high heat for 10-12 minutes until fork tender.
Step 3
When done, remove from the heat. Drain water from potatoes and place in a bowl to cool.
Step 4
When potatoes are completely cool, add all of the remaining ingredients.
Step 5
Mix gently, be sure not to over mix to prevent them from turning into a mashed potato consistency. (Make it as smooth or as chunky as you’d like)
Step 6
Taste it to check if it requires additional seasonings. Season to taste.
Step 7
Sprinkle with the paprika. Refrigerate until cold. Enjoy!
