Instructions

Step 1
Pour olive oil into a dutch oven (or any other type of pot you have to cook soup), and place 2 chicken breasts on to cook. Season them with salt and pepper. Flip the chicken, and season the other side with salt and pepper, as well. Wait until they reach an internal temperature of 165 degrees, and then take off the stove (keep the chicken warm).
Step 2
In the same pot, add your chopped onion, garlic, celery, and carrots.
Step 3
Slowly add in your flour.
Step 4
Afterwards, add in your milk, heavy cream, and pepper. Whisk together.
Step 5
Bring to a boil. Then reduce heat.
Step 6
Add in your gnocchi, chicken, and spinach. Cover and allow to simmer for 10 minutes (not boiling).
Step 7
Add into a bowl, top with parmesan, and enjoy!
