Instructions
Step 1
Put leeks in heatproof bowl and microwave for 3 minutes stirring half way through

Heat oil in frying pan medium heat, add onion and cook 2 to 3 minutes until softened
Step 3
Add leeks, cabbage and butter Cook for 5 to 10 minutes stirring occasionally, until cabbage tender and kkek and onions golden. Remove from heat and tip into large bowl.
Step 4
Add mash and 125g of cheese and season to taste. Stir a until we'll combined. Gently stir in tomatoes. Transfer to baking dish and flatten. Freeze here.
Step 5
Scatter remaining cheese over top and cook in 180 degree oven fir 20 to 30 minutes.
Step 6
From frozen cover with foil cook for 1 hour. Remove foil after 45 minutes and sprinkle 70g cheese on top for last 15 minutes.
