Step 1
Heat 2-qt. saucepan over med., adding olive oil & heat through (1 min.). Simmer onions, celery, & carrots, cooking (5 min.) until onions are soft & translucent. Stir in garlic & cook (1 min. longer).
Step 2
Add in chicken breast, seasoning with salt & pepper then pouring in chicken broth. Boil; reduce heat to med.-low & cook (20 min.) until chicken is cooked through & easily shreds with fork. Shred chicken directly in pot.
Step 3
Make dumplings by whisking together flour, baking powder, sugar, & salt. Toss butter into dry ingredients. Working quickly using your fingers or pastry blender (rub or cut butter into flour until it resembles coarse sand.). Add milk; stir just until dough comes together.
Step 4
Drop by spoonful into soup. Cover & simmer (15 min.) Serve hot.
