One-Pot Taco Spaghetti

One-pot taco spaghetti is an easy Mexican-inspired recipe that will get dinner on the table in 30 minutes! The pasta, beef, and sauce all cook in ONE pot!
My notes: Maybe try salsa and sour cream as a garnish/topping. Also try with penne or other pasta instead of spaghetti. Some recipes call for 3 cups of water.

Ingredients
4 servings
1 Tbspolive oil
1 lbground beef
1 envelopetaco seasoning
1 x 10 ouncesDiced Tomatoes & Green Chilies
Mild, or other canned diced tomatoes
1 Tbsptomato paste
8 ozspaghetti
2 ½ cupswater
½ cupshredded cheddar cheese
½ cupshredded mozzarella cheese
Topping/Garnish
Instructions
Step 1
Heat olive oil in a dutch oven or large pot over medium high heat. Cook beef until cooked through, crumbling the beef as it cooks. Drain, then return to stovetop.
Step 2
Stir in taco seasoning, Ro*Tel, tomato paste, and water. Bring to a boil. Add spaghetti, cover, and reduce heat, simmering until spaghetti is cooked through (about 10- 15 minutes).
Step 3
Remove pot from heat and stir in cheese. Cover for 3-5 minutes to allow the cheese to melt.
Step 4
Serve right in the dutch oven and optionally offer toppings for everyone to choose from.
