Preheat the oven to 180°C fan-bake (200°C regular bake).

Line a roasting tray with baking paper.
Step 4
Lay the drums on a clean board.
Step 5
Pat dry with paper towels.
Step 6
If the skins have sagged down, pull them back up to cover the meat.
Step 7
Tip the crumbs into a large bowl (a roasting tray

also works well) with 1/2 tsp salt.

Add the chopped herbs and oil and toss to combine.
Step 10
Crack the eggs into a medium bowl and whisk until smooth.

Place the flour, peppers and 1 salt in a plastic bag and shake to combine.

Add the chicken (in batches if you need to) and shake in the bag to coat evenly.
Step 13
Dip each floured drumstick in the egg wash, let the excess egg drip off for a few seconds, then place in the bowl of crumbs and pack the crumb on as well as you can.

Arrange the crumbed drums in the lined roasting tray (not touching).

Drizzle or brush them all with more olive oil.
Step 16
Bake in the preheated oven for 35 minutes.
Step 17
Then turn the oven up 20°C and bake drums for another 10–15 minutes to get them really brown and crispy.
Step 18
If you like, you can drizzle or brush more olive oil over while cooking, too.

You can turn the drums over while cooking, but it's not essential.
