These CRUMBL copycat lemon glaze cookies are soft, buttery, and so so chewy. They are topped with a tangy butter lemon glaze for the perfect finish.

Instructions

Preheat oven to 350°F

Step 1
Line baking sheet with parchment paper; set aside.
Step 2
Cream butter & sugars together until light & fluffy. Add egg, lemon juice, lemon zest, & lemon extract ; mix until combined.
Step 3
Gently mix in flour, baking soda, & salt until mixture disappears. (Don't overmix so that your cookies stay soft & chewy.)
Step 4
Scoop out 8 equally-sized cookie dough balls; place them on baking sheet & freeze (15 min.)
Step 5
Bake cookies (10-11 min.), once they come out, swish them around with a larger cookie cutter to keep them thick & round. Cool (10 min.) on baking sheet before transferring them to cooling rack.

Butter Lemon Glaze

Step 6
Mix melted butter, powdered sugar, lemon zest, & lemon juice in sm. saucepan, stirring constantly, until sugar dissolves.
Step 7
Glaze cooled cookies using pastry brush; top with a lemon slice & enjoy!

Notes

Step 8
Store in airtight container at room temp. (up to 4 days.) Don’t top them with the lemon slices until you’re ready to serve to keep cookie from getting too wet.
Step 9
Store these cookies in airtight container in fridge (up to 7 days.) Let them get back to room temp. before enjoying them.
