Step 1
First off, cut your peppers in half and discard the stem and seeds. Bring a large pot of water to boil. Once the water is boiling, drop the pepper halves into the water for approximately 6 minutes. Start timing as soon as the peppers go in, do not wait for it to return to boiling. If you like your peppers softer, you can boil an additional minute; more firm, boil one minute less.
Step 2
In the meantime, cut up your sausage and onion and fry in a pan until heated through and onion is soft. Cut into cubes 3 pieces of bread for each pepper used. Add cooked sausage and onion to bread and season with salt and pepper.
Step 3
After the peppers have boiled for 6 minutes use tongs to remove them from the water and place in a foil-lined baking dish. Stuffed peppers with bread and sausage filling. Bake at 350 for 20 minutes or so (keep an eye on the bread to make sure it isn't burning, but is hardening a bit) Top with mozzarella cheese and bake an additional 10 minutes or until cheese is melted.
