Instructions
Step 1
Preheat oven to 450°F and set oven rack to lowest position.
Step 2
Season roast with salt (in modera- tion) and pepper.
Step 3
Place in a roasting pan, uncovered, with the bones on the bottom.
Step 4
Put in oven and roast for 25 min.
Step 5
Meanwhile, mix the thyme, rosemary, garlic, mustard, and olive oil until well blended.
Step 6
Remove roast from oven.
Step 7
Turn the roast upright so the bones are facing up, then brush all over with the mustard mixture.
Step 8
Lower oven temperature to 400°F and return roast to oven.
Step 9
Roast for an additional 45-55 min. or until an instant read thermometer reads 145°F (medium rare).
Step 10
Remove roast from oven and let rest, covered, for 20 min. before serving.
