Stock
1turkey carcass
cut into pieces
10 cupswater
2carrots
large, cut in thirds
3celery ribs
cut into thirds
1onion
quartered
3bay leaf
3garlic cloves
minced or pureed
1 teaspoondried rosemary
1 teaspoonoregano
1 teaspoonpeppercorns

Instructions
Step 1
Add all the stock ingredients into pressure cooker/instant pot and cook on high pressure for 35 mins Allow for natural release

When stock is finished melt butter in a stock pot

add sliced carrots and celery and saute till softened
Step 4
Add flour and cook 3-5 mins on low heat
Step 5
Using a fine strainer strain the stock from the instant pot into the pot with the vegetables
Step 6
add the Turkey and peas
Step 7
Cover and simmer 15 mins - At this point add dumplings if desired
Step 8
If you would like the stew thicker premix 1 cup of water with 3 tablespoons cornstarch and add to mixture after the 15 mins
