Chicken Marinate
Breading Mix
¾ cupall-purpose flour
1 cupcornstarch
1 teaspoonfine salt
1 tablespoongarlic powder
optional
1 tablespoonground black pepper
Sriracha Sauce
Instructions
Step 1
Rinse the chicken and pat them dry. Generously season the chicken with patis, salt and black pepper. Dredge the wings in flour, shaking off any excess flour, and set aside.
Step 2
In a large saucepan or deep fryer, heat the oil to about 375°. Fry the chicken in small batches until golden brown, 8 to 10 minutes. Shake off any excess oil and place on paper towels to drain. Continue frying the chicken in batches until all of the chicken are cooked.
Step 3
Heat a saucepan over medium heat. Add the butter and Sriracha Sauce. Cook for 1 to 2 minutes.
Step 4
Toss the chicken in the Sriracha sauce and garnish with parsley and lime wedges. Serve warm.
