Step 1
1. Bring water and milk to a boil is a saucepan. Add in Grits, salt and crisco, stir and cook until soft. Turn off heat, add on butter and cheese. 2. Stir in ham, chives, season with salt and pepper to taste. Add beaten egg and refrigerate no more than 30 minutes or until firm. 3. While it's chilling, make the gravy and set aside. 4. Place the breadcrumbs in shallow dish. Scoop out 1/4 cup of cooked Grits and shape into patties. Spray both sides with oil. 5. Preheat fryer to 400°F. 6. In batches but do not over crowd, air fry the gritters for 8 minutes. Using a fish spatula, flip the gritters over and cook for 4 more minutes. 7. Serve how with gravy, YUMMY. FOR THE GRAVY: 1. Preheat saucepan over medium heat. Add and brown the sausage, crumbling into small pieces, cook until pink is gone. Add butter and flour, stirring constantly to combine for about 2 minutes. 2. Slowly pour milk, whisking, and bring to a boil to thicken. Season with salt and pepper TT, lower temperature. Stir in sage, serve hot alongside gritters.
