Healthy Almond milk Chocolate pudding (dairy free, egg free, grain free)

use whatever sweetener you like best. 30 calories per serving for the pudding. If you add shredded coconut,. 1tbsp on each serving brings it to about 80 calories each. I think it's worth it.

Instructions

Step 1
Mix dry ingredients together in microwave safe bowl.
Step 2
Add almond milk to dry ingredients and Whisk until smooth
Step 3
Microwave in 30 second intervals until thickened and looks like pudding. May take 3-5min based on your microwave.
Step 4
Add almond extract. Add additional salt to taste. If not worried about dairy free, add a couple of tbsp butter for flavor.
Step 5
Other options include adding several tbsp natural peanut butter or other nut butter at this point, stir until thoroughly melted and combined.
Step 6
Top with coconut.
Step 7
If making popsicles, put into 10 popsicle mold. Top each popsicle with 1tbsp coconut. freeze an hour, add sticks (unless your mold lets you add them to begin with) freeze for at least 4hrs or overnight.
Step 8
Do not exchange tapioca starch for cornstarch if freezing, as cornstarch is not freezer friendly.
