Making peanut butter cups at home is one of the classic desserts, as it's so easy to do. But instead of double dipping in fat with both peanut butter and melted chocolate, I've swapped the filling for powdered peanut butter, lowering calories and raising the protein. Additionally, both the filling and coating are sweetened with monk fruit, making them sugar free as well

In a medium bowl, whisk together powdered peanut butter, sweetener, salt, and cinnamon. Add in the vanilla and applesauce, and mix with a silicone spatula until you have a fully combined dough

Scoop small balls onto a parchment lined plate, about 8 g each. Lightly wet your fingers, and flatten into even disks. Freeze for 15 minutes to harden

Meanwhile, clean your bowl, and add in the coconut oil. Microwave for 1 minute to melt, and stir in the cocoa powder and sweetener
