Step 1
Cut the chicken breast into strips.

Put the strips in a large bowl or a ziplock bag and add buttermilk. Refrigerate for at least 5 hours or ideally overnight.

When the chicken is marinated, prepare your breading stations. Prepare 3 bowls and put them on the counter.

In the first one, mix flour, cornstarch, brown sugar, chili powder, onion powder, garlic powder, salt and white pepper.

In the second one, whisk the eggs.

Then, put the cornflakes into a ziplock bag and crush them until very small. Add the crushed cornflakes to the third bowl.
Step 7
Take one piece of chicken at a time and coat with the flour mixture, then the beaten egg and finally crushed cornflakes. Press hard so that they stick to the chicken.
Step 8
Heat the sunflower oil (or any other oil that has a high smoking point) in a pot or pan until it bubbles on a medium high heat (7/10 if it’s induction gives the best results). When it bubbles, add the chicken and cook for 3-5 minutes depending on yours strips thickness. Don’t overcrowd your pan and cook in batches!
