200gAP Flour
100gCorn starch

1 Tbsphoney
1 Tbspbrown sugar
¼ tspPaprika
1 TbspHot sauce

Instructions
Step 1
Start by making the brine for the chicken. In a large bowl add all the ingredients for the brine, add the chicken, and marinate for at least an hour (the longer the better).
Step 2
While the chicken is marinating, start by prepping the flour seasoning by mixing all the ingredients together in a tray.
Step 3
In a saucepan, add all the ingredients for the BBQ sauce, and cook it over medium flame for 3-5 minutes.
Step 4
After an hour, take the chicken out of the brine. Coat the chicken in the flour seasoning, then dip it in the brine again, and coat it with the flour seasoning once again. The crust will be crunchy when the chicken is coated twice with the flour. Repeat this process with all the chicken pieces.
Step 5
In a deep frying pan, bring the oil to 420-30°F, then drop the chicken pieces one by one. Don't crowd the pan, that can lower the oil temperatures. Cook the chicken for 3 minutes on both sides over medium flame until it's crispy and golden. For chicken thighs the time could be 1 or 2 minutes more than drumsticks. Transfer the chicken on a wire rack to drain the oil.
Step 6
Brush the BBQ sauce over the fried chicken, and garnish it with some dry parsley. Enjoy!
