Instructions
Marinade Chicken
Step 1
In bowl, marinade chicken in buttermilk and pickle juice for 30 minutes to overnight
Build Batter
Step 2
Combine potato starch, flour, garlic powder, onion powder, paprika, salt, and pepper. Mix till ingredients are integrated
Fry Chicken
Step 3
Remove chicken from bowl (removing excess liquid) and roll in batter mix. (*tip: you can add batter mix in to large paper grocery bag. Add in chicken and shake to coat)
Step 4
In deep pot, heat oil to 350F. Add chicken gently (do not overcrowd pot) and fry for 15-20 minutes till golden brown.
Add Toppings
Step 5
Mix crème fraiche with lemon juice. Top each piece of chicken with spoon
Step 6
Top with spoonful of caviar and garnish with chives
