Instructions

Step 1
1 Heat the oven to 220C/200C fan/gas 7. Rub the feta with 1 tsp of olive oil. Put it on a sheet of foil, then drizzle over the honey and scatter over the coriander seeds, oregano and pul biber. Wrap the foil around the feta to make a sealed parcel, and roast for 10 mins. Unwrap the foil and roast for another 5-10 mins or until caramelised.
Step 2
2 Meanwhile, cut up the tomatoes (I like to slice some, cut some into wedges, halve others) and put in a large mixing bowl. Scatter over a good pinch of sea salt and season well with black pepper. Stir in the olives and red wine vinegar, and leave to sit.
Step 3
3 Put a griddle over a medium-high heat and let the pan get hot. Brush the slices of sourdough with 90ml of olive oil. Sear the bread in the pan – you will need to do this in batches – for 3-4 mins on each side until there are grill marks and the bread is golden and crunchy. Sprinkle with sea salt.
Step 4
4 Spoon the tomatoes onto a serving platter and drizzle over the remaining olive oil. Finish with the basil leaves and top with the feta. Serve alongside the toasts and leave everyone to get topping.
