Horseradish Crusted Salmon Fillets

This horseradish crust is amazing! It's a bit spicy but very buttery, a wonderful balance with the fish. Note that recipe calls for fresh bread crumbs, not dried, an unusual move in this book. You can often find fresh bread crumbs in the bakery department of a large supermarket. Or you can make your own by pulsing torn pieces of stale baguette in a food processor until the consistency is like very coarse sand. (Don't process them too far, not to the size of dried breadcrumbs.). Figure two 4 inch sections of stale baguette will give you about 1/2 cup fresh bread crumbs. For even more flavor, split the baguette sections in half and toast them on a baking sheet under a heated broiler for a couple of minutes before processing.

Instructions

Step 1
With the basket in the air fryer, heat it to 400°F.
Step 2
Mix the breadcrumbs, butter and horseradish in a bowl until well combined.
Step 3
Take the basket out of the machine. Generously spray the skin side of each fillet. Pick them up one by one with a nonstick safe spatula and set them in the basket skin side down with as much air space between them as possible. Divide the bread crumb mixture between the fillets, coating the top of each fillet with an even layer. Generously coat the bread crumb mixture with vegetable spray.
Step 4
Return the basket to the machine and air fry undisturbed for 8 minutes, or until the topping has lightly browned and the fish is firm but not hard.
Step 5
Use a nonstick safe spatula to transfer the salmon fillets to serving plates. Cool for 5 minutes before serving. Because of the butter in the topping, it will stay very hot for quite a while. Take care, especially if you're serving these fillets to children.
