Instructions

Step 1
Mix ginger, garlic, red pepper, apple juice, honey, brown sugar, ketchup, vinegar, water, bourbon, and soy sauce in a bowl; set aside.
Step 2
Trim fat from chicken and brown in a pan with 2-3 tbsp olive oil. Place the chicken in the pressure cooker and pour sauce over the top. Stir to cover all pieces.
Step 3
Cover and select high pressure for about 35-40 minutes. After the timer stops, wait ten minutes before using the quick release method.
Step 4
Remove chicken using a slotted spoon, cover to keep warm, and set aside.
Step 5
Mix cornstarch and 3 tbsp water to make a slurry. Turn pot to sauté, and whisk slurry into the sauce. Cover and thicken, stirring occasionally (about 10 min).
Step 6
Add chicken back to the sauce and add in green onions. Add salt and pepper to taste and stir. Serve over rice.
