1. Preheat oven to 350 degrees F. Lightly coat an 8x4x2 inch loaf pan with cooking spray; set aside.

2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Set aside.

3. In a large bowl, stir together egg, banana, 3/4 cup sugar, and oil. Add flour mixture all at once to banana mixture. Stir just until moistened (batter will be lumpy). Spoon into prepared pan. Sprinkle top with course sugar.

4. Bake 55 to 70 minutes or until wooden toothpick inserted near center comes out clean. Bread will be dark in color.
Step 5
5. Cool in pan for 10 minutes. Remove from pan and cool completely. Wrap and store overnight before slicing.
