Step 1
In braising pan, melt butter. Add in onions and cook, stirring frequently until nearly soft
Add in garlic and cook for about 1 minute, stirring constantly. While whisking, slowly pour in heavy cream then vegetable stock. Add in the potato starch slurry. Stir in broccoli and collard greens. Blend with immersion blender to desired consistency Cook stirring until it begins to thicken. Lower heat to 150F. Stir in shredded cheese, salt and pepper.
