Sheet pan gnocchi and vegetables with parmesan

Instructions

Step 1
Preheat oven to 450 degrees F.
Step 2
Line a baking sheet with parchment.
Step 3
De-seed red bell pepper and cut into 1-inch chunks.
Step 4
Peel onion and cut into 1-inch chunks.
Step 5
Trim zucchini and dice into 1-inch pieces.
Step 6
Combine gnocchi, red bell pepper, zucchini, cherry tomatoes and onion in a bowl.
Step 7
Drizzle with olive oil and toss to coat.
Step 8
Sprinkle with dried rosemary, garlic and salt and pepper to taste.
Step 9
Toss again to combine.
Step 10
Spread the mixture on a baking sheet.
Step 11
Roast until vegetables are tender, 15 to 20 minutes.
Step 12
Spoon gnocchi and vegetables into bowls and top with parmesan and basil.
