Ingredients
8 servings
1 cupcoconut flour
½ cupcocoa powder
1 tspguar gum
½ tspbaking powder
¼ tspsalt
¼ cupghee
melted
2 Tbsporange juice
2 tsporange zest
¼ cupsemi sweet chocolate chips
melted
2eggs
½ cupmaple syrup
¼ tspespresso powder
Chocolate Orange Shell (optional)
Instructions
Step 1
1.Preheat oven to 375 F, and grease a 9 x 13 baking dish.
Step 2
2.Whisk / sift all dry ingredients together in a bowl (coconut flour, cocoa powder, guar gum, baking powder and salt).
Step 3
3.Melt the ghee in a small saucepan, and stir in the orange juice and orange zest. In a separate bowl, melt the chocolate chips. Allow each to cool for about 10 minutes.
Step 4
4.After the melted ghee and melted chocolate have cooled to room temperature, add them both to the bowl of dry ingredients. Add the maple syrup, eggs and espresso powder, and mix everything together; if the brownie mix is super thick and a little hard to mix, I promise that it’s ok.

5.Spread the brownie mix into the greased pan, and bake in the oven at 375 for 20 minutes.
Step 6
6.While the brownies are baking, melt and mix together all of the ingredients for the chocolate orange shell.
Step 7
7.Remove the brownies from the oven, poke with a fork to make little holes, and pour the melted chocolate shell over the brownies- spread around to each corner.
Step 8
8.Top with a little more orange zest and some cracked pink salt, and chill in the fridge for about 30 minutes.
