2 x 6 ouncessalmon filets
skin removed
1 tablespoonolive oil
1 tablespoonfresh lime juice
½ teaspoongarlic
minced
½ teaspoonpaprika
¼ teaspoonkosher salt
¼ teaspoonblack pepper
Garlic Cream Sauce
Instructions
Step 1
Place the oven rack into the top position and preheat the oven to 400°F.
Step 2
Use a paper towel to pat the salmon filets dry. Use a sharp knife to cut each filet into 1-inch squares.
Step 3
In a medium bowl combine olive oil, lime juice, garlic, paprika, salt, and pepper.
Step 4
Pour the mixture over the salmon bites and gently toss to coat.
Step 5
Bake the salmon bites for about 16 minutes, flipping them over halfway through at around 7-8 minutes, or until the salmon reaches an internal temperature of 140-145°F. Place the cooked salmon in a bowl.
Step 6
While salmon is cooking, prepare the garlic sauce.
Step 7
In a medium saucepan over medium heat, add butter, heavy cream, garlic, parsley, salt, and pepper. Stir together until the butter is melted and the mixture is fully combined and heated through (4-5 minutes).
Step 8
Pour the garlic cream sauce over salmon bites and serve over mashed potatoes or rice.
