Instructions
Step 1
Blend sugar with the shortening, add the eggs, mix well. Put the drained pineapple and zucchini into a blender and blend til smooth - add to sugar mixture. Blend til smooth.

Stir all dry ingredients together

Add to the sugar mixture
Step 4
Stir in 2/3 cup chopped nuts and/ or 2/3 cups raisins raisins if desired
Step 5
Divide evenly between two well greased loaf pans.
Step 6
Bake in a 350° oven for 50-60 minutes until a toothpick inserted in the center comes out clean.
Step 7
Remove from oven and let cool on a wire rack for 15 mins. Remove from the pan.
