Traditionally given out by God parents to God children at New Year, the three marks are said to be there to represent the Holy Trinity. This is a very old recipe, which has been rediscovered for the City of Culture in 2021.

Step 1
Roll out the pastry until it is about 3mm thick
Step 2
Cut the pastry into 10cm squares
Step 3
Add a heaped teaspoon of mincemeat to the middle of each square
Step 4
Brush the edge of the square with the egg
Step 5
Fold over the pastry to form a triangle and seal the edges
Step 6
When all the squares have been filled and sealed to form triangles place on a greased baking sheet
Step 7
Brush with the remaining egg and sprinkle with sugar
Step 8
Bake in an oven at 170oC for 15-20 minutes until pastry is lightly golden coloured
Step 9
Cool on a rack
