Paskha Bread Ukrainian Easter Bread

An old recipe from my grandmother, Violet. Although this was made in old coffee cans, I did decorate some with braids and blue icing sugar to pay homage to the Ukraine flag and its people struggling. Share some with neighbors or donate to shelters to sweeten someone day.

Instructions

Step 1
In warm water, add yeast and sugar, stir and let sit for 3 - 5 minutes, until foamy.
Step 2
In mixer stand with whisk, mix eggs until all combined and then slowly add in sugar to dissolve into egg mixture.
Step 3
Add to egg mixture, butter, milk, all flavorings and zest.
Step 4
Now mix in yeast mixture and raisins.
Step 5
In a large bowl mix flour with salt and make well in middle.
Step 6
Pour egg mixture into well and mix well. This dough will be sticky. I let it rest for 5 minutes to hydrate the flour then start kneading.
Step 7
Knead well until smooth, place in clean oiled bowl; cover and let rise for 2 hours.
Step 8
Punch down then divide into 5 two pound pieces. Roll, braid or do both. Place in prepared pans and let rest for 30 minutes.
Step 9
Beat one egg with water and brush over dough; can decorate with colored icing sugars or coarse sugar.
Step 10
While resting preheat oven to 350 degree F. Place in oven and bake for 30 minutes; then reduce to 325 degree F and finish until bread is at 190 degree internal temperature; approximately 15 more minutes.
Step 11
Let cool completely on rack; do not slice till cooled or will go stale faster.
