Ingredients

½ cupextra virgin olive oil
2 tablespoonssalted butter
1yellow onion
sliced lengthwise into 1 inch wedge
3 clovesgarlic
minced or pressed
4 poundsboneless skinless chicken thighs
cut into 1/4 inch strips
1 tablespoonpaprika
1 tablespooncurry powder
1 tablespoonseasoning salt
2 teaspoonsblack pepper
1 ½ teaspoonsground cumin
1 teaspooncinnamon
½ teaspooncayenne pepper
½ cupchicken broth
or garlic broth

Step 1
Place the olive oil and butter in the instant pot then hit sauté and adjust so it’s on the more or high setting. Once the butter is melted add the onion and garlic and sauté for about three minutes, until slightly softened Add the chicken thighs, paprika, curry powder, seasoning salt, black pepper, cumin, turmeric, cinnamon and cayenne pepper, stir to coat everything in the spices. Add the broth and stir well, scraping up any brown bits from the bottom of the pot. Secure the lid, move the valve to the sealing position, hit keep warm/cancel and then manual or pressure cook on high for 7 minutes quick release when done. Prepare your Shawarmawrap and make it your own! I suggest you take some pita, spread on some hummus, and layered with chicken and onions from the pot as well as sliced red onion, pickles and tzatziki. Finish by drizzling the incredible spice infused oil from the pot over the top. Roll it up tightly (wrapping the sandwich in foil may help with the messy drippings) and enjoy.
