Lacey Shrimp Dumplings

Ingredients

For the Dumplings
1 lbshrimp peeled and deveined
raw
1egg white
1 pieceginger
about, chopped rough
1clove garlic
1 handfulcilantro
small
1 handfulthai basil
small
2 stalksscallion
chopped
1 Tbscorn starch
2 Tbssoy sauce
2 tspnsesame oil
1 Tbsrice vinegar
salt
to taste
white pepper
to taste
1 packdumpling wrappers
For the Lacey Skirt

For the Dumpling Filling
Step 1
-Place the shrimp, herbs and egg white in a food processor and blend until smooth, pulsing in 15 second bursts for about 1-2 minutes.
-Transfer the shrimp to a bowl then add the remaining ingredients and mix with a spatula until everything is well incorporated.
-Using about 1 Tablespoon of filling per wrapper, wrap the dumplings as desired and set aside, covered with a damp towel.
For the Lacey Skirt
Step 2
-Whisk all ingredients until well incorporated and set aside.
To Finish

-Work in batches of 5-8 dumplings for best result here.
-In 6 or 8 inch nonstick pan, place about 1 Tablespoon of neutral oil, like vegetable, and heat on medium heat until it begins to ripple.
-Place 5-8 dumplings in the pan and let them cook until the bottoms have just started to brown slightly.
-Make sure to whisk the lacey skirt ingredients right before using, then pour about 1/4 cup of it into the pan, evenly pouring all around. -Immediately place the lid to the pan on top and cook covered for about 3 minutes.
-Remove the lid and once the skirt is completely crisp, turn off the heat and allow to cool for about a minute.
-Invert the dumplings onto a plate and serve immediately with your favorite dipping sauce or chili crisp!
