Instructions

Step 1
Cook 1/2 pound of pasta in salted boiling water. Use about half as much water as you normally would, so the pasta water gets really starchy. After a few minutes remove about a cup of the pasta water and let it cook slightly.
Step 2
As soon as you start the pasta, melt 6 tablespoons of butter over medium heat until it becomes frothy and starts to brown.
Step 3
Add in 1-2 teaspoons of freshly grated black pepper and stir for about a minute. Then remove from heat.
Step 4
Add about a quarter cup of the pasta water to the pan and stir vigorously so the butter/pepper mix emulsifies.
Step 5
Add in about 2.5 ounces of cheese and another quarter cup of pasta water. Stir everything together until the cheese melts and you have a creamy sauce. You may need to add a little more cheese or a little more pasta water so the texture is not too clumpy but not too watery.
Step 6
Add the pasta and mix together until the sauce coats every piece. Serve immediately with a little more cheese and pepper on top.
