Instructions
Step 1
Leave butter out overnight to soften. Pass avocado through a fine mesh or chinois. Add a pinch ascorbic acid to preserve color. Otherwise add lemon juice, but it will change the flavor. Mix soft butter and avocado. Keep tempered to serve
Step 2
Add herbs and very cold oil (put in the freezer for an hour) into a blender with a pinch of salt and blend not letting it get hot. We don’t want the herbs to get hot.

Step 3
When ready to serve slather the butter on a piece of bread with some cracked black pepper and herb oil.
