Instructions

Prep Ingredients

Step 1
Slide Red Bell pepper into Strips
Step 2
Cut sausage into thin uniform coins.
Step 3
Cube chicken breasts into uniform bite-sized pieces

Get Cookin' Good Lookin'

Step 4
Cook sausage in a large pan with olive oil till brown and crispy.
Step 5
Keep grease in the pan, setting aside sausage to drain.
Step 6
Add a half stick of butter to the pan with the grease.
Step 7
Add flour to make a roux.
Step 8
When roux is almost thickened, add an excessive amount of Tony C's and Slap Ya Mama.
Step 9
IN ORDER: Add chicken broth, cubed chicken, tomato paste, sausage, and roux. DO NOT MIX.
Step 10
Sprinkle more Tony C's and Slap Ya Mama seasoning into instant pot. DO NOT MIX.

IMMEDIATELY Start Instant Pot, on Manual, for 23 min

Cooking the Rice

Wait until the Instant Pot Timer starts counting down.
Step 13
Preheat oven to 325-350ish.
Step 14
Follow the instructions on the rice package, but substitute ~1/2 of the water for Coconut Milk.

Shrimp & Bread

Step 15
When the Instant Pot timer hits 10 mins left, start the shrimp and bread.
Step 16
Toss the bread in the oven at 325-350ish to warm.

In the same pan you made the roux in, add ~1/4 tbsp of butter and cook the shrimp.

Right before the shrimp is white and tender, add the sliced red bell pepper to saute slightly.

Assemble

When the Instant Pot is done and depressurized, add the shrimp, coined sausage, and red bell pepper. Mix well.

Slice bread.

Serve Gumbo on rice with sides of buttered bread.
